Meet The Chefs! An Interview with Çiğdem Şerefoğlu

  • What is your favorite food that makes you feel good?

Poached egg during summer because it is very practical, very nutritious, and a very tasty and light meal. If there is a lunch on a summer day, the only thing that I cannot say no to is probably poached egg. I also love to eat it tirit winter.  These are the two things that I cannot say no to.

  • What does it mean to you to be a woman working in the field of gastronomy?

I believe this concept is only prevalent in Turkey. The constant separation of the subject of men and women seems to me to put women in a different position, even the fact that only women are included here today. I do not think it should be separated; I think we should have cooked the food together with men here today. But it seems like it is very difficult, it is reflected as if it is very difficult conditions, in fact, it is not difficult anyway. Mothers cook the best food, your grandmother’s best food is in your mind. When you say food and kitchen, I think women are an indispensable part. I think that the kitchen with the woman becomes more disciplined, organized, clean and attentive. It is not difficult, just working hours and conditions are different compared to other occupational groups. Not if you are a woman, but a mother, it must be difficult because of the hours.

  • What is your favorite destination to visit? Why?

I love to visit farmers markets. Wherever I go, I love to visit the farmers market there. Those markets reveal to me the whole sociological structure of that country, city or village. I find answers to my questions such as how the people in that region are fed, whether the workers are male or female, do they plant it themselves, do they sell products from abroad.
