Scallop Carpaccio with Passion Fruit & Fennel

INGREDIENTS (Serves 4)

  • 8 scallops
  • A bunch of fennel frods
  • 8 passion fruits
  • Sea salt
  • Olive oil

METHOD

  1. Slice the scallops into very thin coins and place them on a tray in the refrigerator until very cold.
  2. Cut the passion fruit in half and scoop out the flesh.
  3. Trim off the frods from the fennel. 
  4. To finish and serve, scatter the fennel frods, season with salt and olive oil and add the passion fruit.
