Radicchio Deep Fried in Rye Sourdough

INGREDIENTS

  • Radicchio
  • Rye Sourdough
  • Oil
  • Water
  • Buddha’s hand
  • Lemon
  • Salt

METHOD

  1. Chop radicchio in four parts, keeping each part linked to the core of it.
  2. Pass it over rye bread starter fed the day before (if necessary add a little bit of water).
  3. Deep fry it. Add some buddha’s hand lemon skin and salt.
