INGREDIENTS (Serves 4)
- 8 scallops
- A bunch of fennel frods
- 8 passion fruits
- Sea salt
- Olive oil
- Slice the scallops into very thin coins and place them on a tray in the refrigerator until very cold.
- Cut the passion fruit in half and scoop out the flesh.
- Trim off the frods from the fennel.
- To finish and serve, scatter the fennel frods, season with salt and olive oil and add the passion fruit.
