Chilled Pea Velouté with Goat Cheese & Borage Flowers

INGREDIENTS

  • 1000g of frozen peas
  • Water
  • Salt
  • Goat cheese
  • Borage Flowers

METHOD

  1. For the pea velouté, place the peas in a blender and add boiling water. Blend gradually until it has the consistency of soup. Season to taste and refrigerate.
  2. To serve, arrange goat cheese slices round each bowl. Pour in the soup and garnish with borage flowers.
